Death in the Afternoon Cocktail

Also referred to as Hemingway Champagne, this potent cocktail was created by Ernest Hemingway a few years after he published a non fiction book under the same name about the ceremony and traditions of Spanish bullfighting.
In honor of National Absinthe Day we offer you a variation on Hemingway’s milky, iridescent concoction. Enjoy!
        In a small wine glass or Champagne coupe add
  • 1 oz. Absinthe (or Pernod)
  • 1 tsp simple syrup (or a sugar cube if you really love bubbles)
         Top with Champagne or Sparkling Wine
