NOSE: Low amount of ethanol detected. Roasted corn, caramel, pencils, and a beautifully soft hint of dough. Agitation brings out more oak notes. Natural decanting makes the nose softer and sweeter. Water brings out a cologne quality while bringing a balance between grain and barrel notes.
PALATE: Bold and explosive. Highly viscous and saliva inducing. Flavors seem to come from the barrel end of the spectrum. Adding water lessens the explosiveness and brings more definition to the overall profile.
FINISH: Very long with slow pulses of warmth that coat the entire mouth.
OVERALL: Without water, the nose seems to gravitate toward grain influence while the mouth displays barrel notes. Adding water brings a balance and definition that is not at all diminished in the finish. This is a wheated bourbon with a fair amount of complexity. Barreled on 2-28-2017 this bourbon is certainly ready to be enjoyed.
